"Coconut Whipped Cream"


 

Ingredients

  • 14 oz. can coconut milk
  • 1/2 of 12.3-oz. package silken tofu, extra-firm
  • 2 1/2 tablespoons natural sugar
  • 1 teaspoon vanilla extract
  • 2 dashes salt
  • 3 teaspoon Instant Clear Jel

Steps

  • Blend first four ingredients smooth in blender,
  • then while still blending sprinkle in Instant Clear Jel.
  • Chill to thicken. Stir briefly before serving.
  • Makes 12 servings
