"Corn Bread"


 

Ingredients

  • ½ cup tofu
  • ¾ cup water
  • ½ cup applesauce
  • 2 Tbs. honey
  • ¾ cup cornmeal
  • ¾ cup corn flour
  • ½ cup whole wheat pastry
  • 1 Tbs. baking powder
  • 1 tsp. salt

Steps

  • Blend tofu, water, and honey in blender until smooth.
  • Place mixture in large bowl with applesauce.
  • Stir in the remaining ingredients and stir briskly.
  • It will be stiff compared to average corn bread, more like dropped biscuits.
  • Spread into an 8x8 pan or scoop into sprayed muffin tins.
  • Bake at 375 degrees for 20 to 30 minutes.
