"Gazpacho Soup"


 

Ingredients

  • 2 ripe tomatoes
  • 1 cucumber
  • 1 green pepper
  • 1 clove garlic, minced
  • ½ cup fresh herbs or 2 Tbs. dry herbs: parsley, thyme, basil or tarragon.
  • 1 Tbs. olive oil
  • 3 Tbs. lemon juice
  • 2 cups chilled water or vegetable stock
  • 1 onion
  • 1 tsp. salt

Steps

  • Chop the vegetables fine.
  • Slowly add the liquids, then the onion and salt.
  • Chill for 4 hours before serving.
  • Garnish with dry bread crumbs.
