"Lemon Rice"


 

Ingredients

  • 1 cup rice
  • 2 cups water
  • 2 tsp. oil or small amount of water
  • 1 tsp. mustard seeds
  • 2 chopped red chilies
  • 1 tsp. lentils
  • 1 tsp. chick peas
  • ¼ tsp. turmeric powder
  • ½ cup raw peanuts
  • 4 tsp. lemon juice
  • 2 Tbs. chopped fresh cilantro
  • pinch of crushed coriander leaves
  • salt to taste

Steps

  • Prepare rice in a cooker and set aside.
  • Heat oil or water in pan.
  • Add mustard seeds and when they start to split, add chilies.
  • After 1 minute, add lentils, chick peas, peanuts, and turmeric.
  • After 1 minute, or when this mixture becomes brown in color,
    add prepared rice to the pan.
  • Mix well and add lemon juice, coriander leaves and curry leaves.
  • Add salt to taste and mix well.

This is very good with soy yogurt.
