"Peachy Breakfast Cake"


 

Ingredients

  • 5 ½ cups whole wheat bread crumbs
  • 1/3 cup unsweetened coconut
  • 16 oz. can unsweetened peaches
  • 2 ripe bananas
  • ½ cup orange or pineapple juice
  • 1 ½ tsp. vanilla
  • 1/8 tsp. almond extract
  • 2 bananas, sliced
  • 2 cups raisins

Steps

  • Combine the bread crumbs and coconut and set aside.
  • Blend peaches, ripe bananas, pineapple juice, vanilla, and almond extract.
  • Layer in a 9x13 inch baking pan as follows:
    1. Peach sauce
    2. Crumb mixture
    3. Banana slices
    4. Raisins
  • Continue layering and end with a layer of crumbs.
  • Bake at 350 degrees for 30 minutes or until golden brown. Serve warm.

Hint: This will not set up like a regular cake. You will need to dish it out with a serving spoon.
