"Polynesian Bars"


 

  • 2 cups chopped dates
  • 1 20 oz. can unsweetened crushed pineapple

Mix this together and cook on
low until it’s a spreadable
consistency.

In a separate bowl mix the
dry ingredients:

  • 3 cups oatmeal
  • 1 cup millet flour or unbleached flour
  • 1 cup unsweetened coconut
  • ½ cup chopped pecans or walnuts
  • ½ tsp. salt

Mix thoroughly.

  • Add 1 cup orange juice to dry ingredients to moisten.
  • Spread ½ of this on a 9 x 12” baking dish and pat down.
  • Spread the date and pineapple mixture on top.
  • Crumble the remaining oatmeal mixture over the top and pat down lightly.
  • Bake at 350 degrees for 30 min. or until lightly browned.
