"Potato Salad"


 

Ingredients

  • 6-8 cooked diced red potatoes
  • 1 cup finely chopped onions
  • 1 cup finely chopped celery
  • 1 cup frozen peas
  • 2 cups tofu mayonnaise
  • Salt to taste

Steps

  • Placed cooked, diced potatoes in a large bowl.
  • Add the onions, celery, and mayonnaise to the potatoes and mix well.
  • Fold the peas in last. It looks nice to keep them whole.
  • Chill.
