"Ruby's Coconut Crispies"


 

Ingredients

  • 1 cup coconut [raw]
  • ½ tsp. salt
  • ½ cup whole wheat flour
  • ½ cup unbleached white flour
  • ¼ cup Sucanut®
  • ¼ cup oil
  • 1 tsp. vanilla
  • ½ cup water

Steps

  • Roll under wax paper on cookie sheet turned upside down until very thin.
  • You may need to spray sheet with a non-stick spray first.
  • Score them into diamond shapes.
  • Bake at 300/325 degrees until golden brown.

COOKING HINT: Use two cookie sheets placed inside each other to help prevent burning.
