"Tofu Mayonnaise #2"


 

Ingredients

  • 1 16 oz. brick tofu or 1 box Mori-Nu tofu
  • ½ cup water or more
  • ¼ cup lemon juice
  • 2¼ tsp. salt
  • 1 Tbs. onion powder
  • 2-4 Tbs. potato flour

Steps

  • Blend together until smooth all ingredients except the potato flour, adding just enough water so the tofu will blend.
  • While blender is running, add 2 Tbs. potato flour and continue blending about 30 seconds for mix to thicken.
  • Blend about 30 seconds more after the last of the potato flour has been added to make it look smooth and satiny.

HINT: Make sure you are using potato flour, not potato starch. Also, insufficient blending will result in a mealy appearance from the flour. Too much potato flour will make it gummy and starchy, so try to learn the right balance.
